VT Burner is a patented infrared gas burner technology designed primarily for commercial cooking equipment and aims to deliver the same or better cooking performance with significantly less gas usage. It uses a combination of traditional combustion (convection) and infrared radiation so more of the heat is directed into the pan instead of up the sides into the room.​

Some benefits of VT Burner technology:

  • Cast-iron (cast steel) construction with a patented core and fin geometry (“VT fins”) that increase heat absorption and radiate concentrated heat under the cookware.
  • Typical commercial range burners are about 30–40% efficient and can waste roughly 60% of their gas into the kitchen environment. VT Burner claims overall efficiency of about 50–60%, with some descriptions citing up to 65% more efficiency versus standard burners.
  • Faster heat-up and more even heat distribution under the pan can reduce cooking times.
  • Lower gas input means reduced utility spend, less hood and HVAC load (because less heat is wasted into the kitchen air), and a smaller environmental footprint from gas consumption.
